Fat Free Tortillas



Combine flour, salt and baking powder in a small bowl. Add yogurt and water. Stir well, if too sticky to handle add flour a little at a time until you can handle and knead until smooth(about 20 to 25 turns). Shape into a ball and let rest on floured surface under the mixing bowl about 20 minutes.
Divide the dough into about eight smaller balls with a sharp knife. Roll or press to a nice size(too thick and they will not get done, too thin and you get chips-this takes practice). Place on hot griddle or non-stick large frying pan and cook for about 2 minutes. Turn and cook for 1 more minute. The tortillas should be slightly golden with darker gold to brown areas. Stack on a warmed plate or in a tortilla keeper.
Fill as desired. A slice of fat free ham and a slice of fat free cheese warmed in the microwave for about 45 seconds makes a great breakfast.
