Fat Free Pound Cake
- 2 egg whites, beaten till fluffy
- 1 cup non-fat yogurt
- 1 cup fat free evaporated milk
- 1 cup Second Nature Eggs
- 3 cups flour
- 2½ cups sugar
- 3 tsp baking powder
- 4 tbls vanilla
Combine dry ingredients and set aside. Mix yogurt, milk, eggs and vanilla and beat well. Add dry ingredients about a cup at a time, beating well after each addition. Fold in the egg whites until just well combined. Pour into a bundt pan sprayed with non-fat butter flavored spray. Bake 45 minutes in a 325° oven that has been preheated or 55 minutes to an hour if not preheated.
For variety use lemon flavored non-fat yogurt and add 2 tsp finely grated lemon peel. Use lemon juice instead of vanila and add 2 tbls poppy seeds.
